WINDFALL APPLE & LEMON CAKE

Gather ingredients:

Self Raising flour, eggs butter, sugar, apples, lemon, baking powder optional.

 

 

Place tin over baking paper. Mark a line around the base.

Now draw line to corners. Then cut these lines to meet base line.

Smudge a bit of butter into tin to help stick baking paper.

Place baking paper into tin and fold in corners.

Weigh out 125gms vanilla sugar if you have it. Link above to how to make it.

Peel apples and cut out brusied bits

Grate apple

Place all weighed ingredients in bowl except the grated apple. Then mix well with a food mixer. dd i teaspoon of baking powder if you wish.

Once mixed add apple and stir in.

Now grate the rind of a lemon.

Fold the lemon rind inot the mixture.

Place the mixture into the tin. Bake at 180 degrees Centrigrade for about 25 - 30 minutes

It is done when a skwere comes out cleanly from the centre of the cake. Leave to cool and then enjoy.

Windfall apple and lemon cake

 

A yummy cake that is so easy to make and perfect for using up windfall apples or those that are past their best.

It is Harriet Hare's second favourite cake. The first being carrot cake.

 

Ingredients:

250 gms Self Raising Flour

125 gms Sugar. Vanilla sugar is perfect. You can make some here but it takes a

                                                              while for the flavour to seep into the sugar.

125gms Butter

3 Eggs

Apples

Lemon

Optional:

1 teaspoon Baking Powder

 

Start by washing your hands well and warming the oven to 180 degrees centigrade befor you start the cake.
